This week I had a large zucchini squash, some fresh tomatoes, and a few other ingredients I wanted to use, so I invented a casserole that was a big hit with my family. The price was right and the taste was exceptional!<\/p>\n<p class=\"Body\"><strong>Ingredients<\/strong><\/p>\n<ul>\n<li class=\"Body\">1-pound ground pheasant<\/li>\n<li class=\"Body\">2 tablespoons olive oil<\/li>\n<li class=\"Body\">1 can Ro*Tel tomatoes and green chilies<\/li>\n<li class=\"Body\">1-2 zucchini squash (depending on the size), peeled and sliced into quarter inch slices<\/li>\n<li class=\"Body\">1-2 Fresh Tomatoes (depending on the size)<\/li>\n<li class=\"Body\">1 onion (small-medium)<\/li>\n<li class=\"Body\">2 garlic cloves<\/li>\n<li class=\"Body\">1 heaping cup of mushrooms<\/li>\n<li class=\"Body\">1 8 oz. package shredded mozzarella cheese<\/li>\n<li class=\"Body\">Salt<\/li>\n<li class=\"Body\">Pepper<\/li>\n<li class=\"Body\">Italian seasoning<\/li>\n<\/ul>\n<p class=\"Body\"><strong>Directions<\/strong><\/p>\n<ol>\n<li class=\"Body\">Heat oven to 350<img class=\"lazyload\" decoding=\"async\" src=\"data:image\/svg+xml,%3Csvg%20xmlns%3D%27http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%27%20width%3D%276%27%20height%3D%2719%27%20viewBox%3D%270%200%206%2019%27%3E%3Crect%20width%3D%276%27%20height%3D%2719%27%20fill-opacity%3D%220%22%2F%3E%3C%2Fsvg%3E\" data-orig-src=\"file:\/\/\/C:\/Users\/A4AAD~1.GOB\/AppData\/Local\/Temp\/msohtmlclip1\/01\/clip_image002.gif\" alt=\"\" width=\"6\" height=\"19\" \/><\/li>\n<li class=\"Body\">Dice your onion and chop and smash your garlic into tiny pieces. Add both to a skillet with two tablespoons of olive oil. Cook until soft and fragrant before adding 1 pound of ground pheasant to the mixture.<\/li>\n<li class=\"Body\">Stir in salt, pepper, and Italian seasoning to the ground pheasant mixture. I used a light amount of this seasoning. Turn your skillet to low as you only want to cook your ground pheasant until it is about half done.<\/li>\n<li class=\"Body\">Next line the bottom of a 9 X 13 pan with the sliced zucchini. Add sliced mushrooms to make the next layer, followed by diced fresh tomatoes.<\/li>\n<li class=\"Body\">Sprinkle about 4 oz. of mozzarella cheese over these layers.<\/li>\n<li class=\"Body\">Next add all of the ground pheasant, onion, and garlic mixture to make the next layer.<\/li>\n<li class=\"Body\">Pour can of Ro*Tel tomatoes and green chilies over the top of the casserole.<\/li>\n<li class=\"Body\">Lastly, add the rest of your mozzarella cheese.<\/li>\n<li class=\"Body\">Bake at 350<img class=\"lazyload\" decoding=\"async\" src=\"data:image\/svg+xml,%3Csvg%20xmlns%3D%27http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%27%20width%3D%276%27%20height%3D%2719%27%20viewBox%3D%270%200%206%2019%27%3E%3Crect%20width%3D%276%27%20height%3D%2719%27%20fill-opacity%3D%220%22%2F%3E%3C%2Fsvg%3E\" data-orig-src=\"file:\/\/\/C:\/Users\/A4AAD~1.GOB\/AppData\/Local\/Temp\/msohtmlclip1\/01\/clip_image002.gif\" alt=\"\" width=\"6\" height=\"19\" \/>\u00a0for 35-40 minutes.<\/li>\n<\/ol>\n<p class=\"Body\">This makes 6-8 servings.<\/p>\n<p class=\"Body\">I served this casserole with fresh corn on the cob and it was all a hit.
